For admissions, can I copy photos to complete the sketchbook assignment?

No, emphatically no. The sketchbook is trying to measure your skills in observation and invention. Using photos prohibits this - and yields a "copied" look.  However, we are also interested in your imagination.  Presenting ideas of your own are also valuable.

How many terms of traditional drawing classes will I take?

Your first three terms at The Guildhall at SMU will include traditional drawing class, with an emphasis on the figure.
